White Chocolate Oreo Popcorn

I’m a sucker for anything sweet, and holy cow do I love food. Like LOVE food. Growing up Greek, I ate my fair share of strange foods, so I really do eat anything and everything.

However, desserts are my weakness. When I’m full after a meal, it’s really hard for my willpower to kick in and say no when dessert is offered. Ice cream, chocolate, cakes, cookies… (Sigh) So when my coworker made white chocolate Oreo popcorn, my world turned upside down. I love the sweet/salty mix, and this treat was beyond delicious. Best of all, it is so simple! Did I mention it’s yummy? Lucky for you, I have the recipe!

What you’ll need:
- 1 cup white chocolate chips
- 1 package of Oreos
- Popcorn (Either 1 bag popped or 1 batch in the air popper, butter or kettle corn–whatever you’re in the mood for!)

Directions: Make your popcorn, set aside. Take out a row of Oreos and crush them in a Ziploc bag using your fingers (you could also use a rolling-pin), set aside. Melt the white chocolate chips in the microwave until all chips are melted.

Place popcorn in a fairly large bowl, pour the melted white chocolate over the popcorn, add the crushed Oreos, mix carefully until the popcorn and Oreos are coated. You can then either leave it in the bowl or pour it out onto a cookie sheet for the chocolate to harden.

That’s it! You are done!

I dare you to not have more than one handful…

Cold Veggie Pizza

Vegetable pizza is a quick and easy appetizer that everyone always seems to enjoy! It has been my go-to recipe for multiple events and always leaves tummies full.  The great thing about this recipe is that it can be changed up with whatever vegetables you are in the mood for or happen to have in your fridge.  For example, I’ve used an assortment of the following on different occasions: broccoli, celery, olives, cucumbers and carrots.  Everything can be prepped in advance or the day you are ready to gobble it down.

Ingredients

  • 2 (8 oz) packages crescent rolls (even the reduced fat option tastes great!)
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup mayo
  • 1 packet dry ranch seasoning
  • 2 cups vegetables, chopped or cut into bite-size pieces
  • 1 cup shredded cheese (optional)

Directions

  • Pre-heat oven to 400 degrees. Unroll crescent dough sheets onto a large non-sick baking pan to completely cover the pan. Press the your fingers over the dough to seal the seems. Bake 8-10 minutes, or until the top is lightly browned. Set aside to cool.
  • Mix together the cream cheese, mayo and dry ranch mix. Set aside.
  • Once the crust is completely cooled, evenly spread the cream cheese mixture over it. Top with the mixed vegetables and cheese of your choice. Refrigerate until ready to serve.

WARNING: You won’t be able to have just one piece. Just saying…

Have a Super, Super Bowl

Last year, I watched in heartbreak as the New Orleans Saints stomped the Colts in Super Bowl XLIV. This year, unfortunately, I won’t be seeing Peyton out on the field. Instead, I, along with more than 106 million people (according to Nielsen Co.), will be watching for the love of the game. According to my dad, this viewing number surpasses the 1983 finale of “M*A*S*H” becoming the most-watched program in U.S. television history. Awesome. Thanks Dad.  

Anyways! This Sunday, I will be watching the Super Bowl with friends, and although I won’t be rooting for the home team, there are several things I am excited about: 

  • Commercials. Need I say more? If you are not watching for the teams playing, you are watching for the ads! Personally, I always enjoy the Budweiser commercials or even the funny Snickers commercials—like last year’s Betty White ad—classic. What will be “the big one” this year?
  • Black Eyed Peas. I’ve always been a fan! It will be nice to see a half-time show band under the age of 35 performing on stage. After Janet J’s fiasco, we’ve seen the acts of The Rolling Stones, Tom Petty and the Heartbreakers, The Who, etc. Don’t get me wrong, these groups helped define what rock is today. But the NFL has been playing it safe. It’s about time we got a sexy female back up there. Fergie is my girl. I hope to hear some Boom Boom Pow.
  • Social drinking. Nothing beats a casual beer on a Sunday afternoon with friends. Bud Light Lime all the way!
  • Food. Add a great appetizer to that drink and you’ve got yourself a party. Whether it’s guacamole, mini wieners or meatballs, I am always game for finger foods. 
  • Camaraderie. I don’t want to get all sappy on you, but the best part about watching the Super Bowl is the company you watch it with. For the past three years, I have been watching with my boyfriend’s friends–who happen to be my friends too—who, ironically, date my friends too (you follow?) It’s always a great time and many LOL’s are achieved.  

So who am I rooting for this Sunday? Let’s just say that I am not a Roethlisberger fan. 

So, for all those PACK fans—a prayer for Sunday…

Aaron Rodgers, who art in Lambeau, Hallowed be thine arm. Thy bowl will come, it will be won, in Dallas as it was in Lambeau. Give us this Sunday our weekly win and forgive the less-passers as you will not let them pass against us. Lead us not into frustration, but deliver us from Steelers. For thine is the MVP, the best of the NFC, and the glory of the Cheeseheads, now and forever. Go get’em. Amen.
